With the increasing demand for healthier foods, and the growing awareness of the importance of sustainability, the “100 mile diet” and “locally grown,” Portofino Bakery is excited to introduce two new loaves that embody this movement towards a healthier future: our artisan made Vancouver Island Wholegrain and a Vancouver Island Harvest Pan loaf. As the names suggest, both loaves are made with wheat grown a stone’s throw from our bakery, in wheat fields located in Metchosin and on the Peninsula. It’s taken some time to find a secure and reliable source for locally grown wheat that have the characteristics we search for, but we’re happy to say we’ve finally managed to do so.
We love Local
Part of being from Vancouver Island is the pride we take in our local products. Supporting local business has always been very important to us, finally being able to produce a product made with Vancouver Island wheat was even more exciting. One of the road blocks we ran into when we began to work with local wheat farmers was how to get the wheat milled. There was nowhere on the island where we could get this done. We actually had to ship our wheat to Vancouver to have it milled and then ship it back to the Island to use, not very cost effective or sustainable. To solve this problem we bought our own mill, allowing us to process Vancouver Island grown wheat on site. This helped us reduce our costs and enabled us to pass these lower prices on to our customers, helping us to make local more affordable.
