Allergen Information

 

Allergic reactions, which can be severe, are adverse reactions that can occur when the body’s immune system over-reacts to a particular allergen. This reaction may be caused by, among other things, certain foods. The nine priority food allergens are:
·         Peanuts
·         Tree Nuts
·         Sesame Seeds
·         Milk (and milk products)
·         Eggs
·         Seafood (Fish, Crustaceans and Shellfish)
·         Soy
·         Wheat
·         Sulphites (food additives)
At Portofino Bakery, we are acutely aware of the disastrous consequences that can result from someone with an allergy coming into contact with a particular allergen. For this reason we have put in place a Company Allergen Strategy.
 
The two most severe allergens, peanuts and seafoods, are completely banned from the facility. All other allergens, with the exception of wheat products, are separately stored within our ingredients storage area. Milk and egg products have their own designated storage space in our cooler. After usage, all allergens are removed from the production floor and stored back in their appropriate space. Equipment and utensils are sanitized after having been in contact with allergens.
 
We have initiated an allergen awareness program for every new Portofino employee. This entails creating awareness and knowledge of allergens and their effects, and the absolute necessity of strict and proper handling procedures of allergens within the bakery, so as to minimize potential cross-contamination.
 
Please note that Portofino Bakery does not use wheat-free flours. All our breads, buns and most pastries contain at least one variety of wheat flour. We use butter, eggs, milk and milk products as well as a wide variety of nuts and seeds. Some of our ingredients contain or may contain soy and/or sulphites. Please check the ingredients lists of our products for specific information on each individual product.
